History of Absinthe
2007 Commercial sale and distillation of Absinthe in the United States resumed in the year of 2007. In the 90's Europe began to reauthorize the manufacture of Absinthe and the sale of Absinthe. But even though Absinthe was available again in the United States of America, Absinth in the United States has a legal restraint in it's composition. On the contrary europe doesn't has this strict restraint.
1912 - 1915 Absinthe has been banned in the United States and in most European countries except the Denmark, Portugal, Spain, Sweden, United Kingdom and the Austro-Hungarian Empire. Many other countries were soon to follow. The chemical thujone, which is present in Absinthe in small quantities. The thujon in absinthe and it's effect was to take blame and a significant reason for the bann of absinthe and drinks which contain thujone. Absinthe was reffered to as an dangerously addictive psychoactive drug due to the "absinthe effects".
Absinthe, the wormwood spirit
In the second-half of the 18th century, the first recipe of absinthe was created in "Val de Travers"(Switzerland) which today is known as Swiss canton Neuchâtel. In Switzerland evidence of wine being mixed and drunk with wormwood dates 1737. Absinthe is very traditional distilled beverage. It's alcohol differs between 42% - 89,9%. Traditionally it is an anise and fennel flavored spirit derived from herbs, including and most important the flowers and leaves of the herb "Artemisia absinthium", also called "wormwood". Though Absinthe is usally anise flavored, producers recognised that the demand of anise-free Absinthe exists and partial they've also began to move away form their traditions to please their costumers. Also it's interesting to know that Absinthe became illegal in Switzerland on 7 october 1910. 1912 - 1915 Absinthe was banned in the United States of America and in many european states. Reasons for the ban were, that it was said that it would cause serveral illnesses and because it was declared as a dangerously addictive psychoactive drug. They blamed the chemical called "thujone", which Absinthe contains in a small amount to be addictive. However, since the ban, there were still distillers which produced absinthe undercover/illegally. Because of the ban, the Suisse La Bleues" were unavailable in the shops and had to be sold under the table. One of these famous bootleggers is Claude-Alain Bugnon; he was the first to receive an official license to legally produce absinthe once it became legal again. 1998 Absinth had it's revival because most of the european states began to reauthorize its manufacture and on the 1st february 2005 Absinthe was legally produced again in Switzerland. The legalization occured, cause absinth was vilified, although there never were any evidence that have proven that absinthe is any more dangerous than other spirits. Its psychoactive characteristics, apart from those of alcohol have been overstated in the time it was declared illegal. Famous Absinthe-Drinkers were: Vincent van Gogh, Ernest Hemingway, Oscar Wilde, Henri de Toulouse-Lautrec, Charles Baudelaire, Paul Verlaine, Arthur Rimbaud and Aleister Crowley.

How should you drink your Absinthe?!
The following drinking rituals are the most famous ones.
Suisse ritual Traditionally (in Switzerland) Absinthe is drunk "mixed" with water (first about 2cl (0.68 fl.Oz.) Absinthe is poured into an absinthe glass and then water (the triple amout of the Absinthe) is slowly added sometimes through absinthe fountains and sometimes through a absinthe decanter.
French ritual In France it's almost the same, but there is one huge difference. First a absinthe spoon is placed on a absinthe glass. On that absinthe spoon you put one to two pieces of sugar. Then Absinthe is poured into the glass and the water slowly over the sugar, in the same relation as the suiss ritual. (One part Absinthe, three to four parts water). Once the water is completly filled into the glass, the sugar is added and stired with the absinthe spoon.
Czech ritual Nowadays the way the Czech drink their Absinthe is growing popularity. Like the french they place one to two pieses of sugar on their absinthe spoon and then they pour Absinthe over the sugar. The Absinthe soaked sugar is then lightend up and burns in a blue flame until the sugar is caramelize. Water is then poured over the caramelized sugar and the sugar is stired with the absinthe spoon.
But aside the rituals many absint cocktails began to get poplular like Ernest Hemingway’s "Death in the Afternoon" cocktail, in which iced Champagne is mixed with Absinthe. By now there are even Absinthes that are intended to be druck pure on ice, so you could say all in all Absinthe has many faces which keeps it so interesting.
